Great Pasta Starts with Great Flour

Flour 411

At Piccoline's Table, we use only organic durum semolina flour — the traditional choice in Italy for its rich flavor, golden color, and exceptional texture.

Simple Ingredients. Extraordinary pasta.

Why Duram Wheat?

Duram wheat is a hard variety of wheat, naturally higher in protein than the wheat used in most bread. It gives pasta its signature:

  • Firm Texture

  • Perfect al dente bite

  • Beautiful golden color

  • Rich, satisfying taste

  • Ability to hold sauces beautifully

What’s Naturally Inside?

Organic durum semolina provides important nutrients naturally.

  • Plant-based Protein - Supports muscle health and keeps you satisfied

  • Complex Carbohydrates - A steady source of energy

  • Fiber - Supports healthy digestion

  • Iron - Helps carry oxygen and supports energy levels

  • B Vitamins - Including folate and thiamin, which help convert food into energy

  • Minerals - Magnesium, phosphorus and selenium that support healthy bones, muscles and immune function

A Tradition of Simplicity

Organic durum semolina flour

Authentic Italian pasta has been made the same way for centuries:

Water

Fresh eggs (when used)

Love and Skilled hands

No Preservatives. No artificial ingredients. Just honest, traditional pasta.

Slow Dried. Worth the Wait.

Our handmade pasta is naturally slow-dried over 2-3 days, rather than rapidly machine-dried like most commercial boxed pasta. Even when boxed pasta has a similarily simple ingredient list, the drying time and processing may influence the pasta’s structure, starch digestability and how the body responds to it.

Handmade Vs. Commercially Boxed Pasta

  • Organic durum semolina flour

  • Water (and fresh eggs when used)

  • Naturally dried over 2-3 days

  • Small batches made with love

  • Authentic traditional methods

  • Simple, recognizable ingredients

  • Often a simple ingredient list

  • Rapidly machine-dried

  • Mass produced

  • May include additional ingredients such as gums, stabilizers and preservatives
