Do You Have a Store or Restaurant?
No - we are a home-based cottage food small business! We offer the following options for you to get your pasta:
Porch Pick-Up (located in Marlborough, MA)
Farmers Markets Pick-Up (our current market is the Marlborough Farmer’s Market, every Saturday from 9AM to 1PM)
Shipping
Local delivery is available on a case by case basis, depending on location and order - this can be discussed prior to ordering by submitting a ‘Contact Us’ message!
What Are the Timeframes for Orders?
ORDERS FOR PICK-UP: Currently, orders of 3 bags of pasta or less apply to same-week availability. Orders of 4 bags or more require additional preparation time, and would be available the following week.
Orders for SAME WEEK pickup MUST be placed by 12:00 NOON on the prior Tuesday.
SHIPPING: As orders are all made-to-order, please allow 1 week for preparation of your order prior to shipping (this does NOT include shipping dates) - this time is needed to properly create, fully dry, and package your order!
What Are All The Shapes You Offer?
MANY, but the shapes of our pasta entirely depends on what variation or flavor you want. Why aren’t certain shapes available in the flavor you want? Certain flavors will not hold up in some cuts of pasta. Ingredients, fragility, moisture, and even weight of the pasta with ingredients can affect it’s success. For example, picture the size of a piece of minced garlic, or a chunk of peppercorn; a piece of spaghetti would NOT support holding or incorporating these solid pieces, as it’s too thin and fragile - the pasta would break or rip! So, many of our flavors with solid ingredients such as garlic, pureed vegetable pieces, etc. will only be offered in larger cuts of pasta. Other flavors with more liquid components (such as lemon juice, beet juice, etc.) are offered in more options, as they are smooth and easily incorporated!
We have taken care to list the proper pasta cuts for each flavor and variety on our site! If you don’t see a particular cut under a certain flavor, this is likely for a reason, and is not currently offered in that cut. (This may change from time to time! Weather, humidity, environment, and even ingredient quality can affect the outcome of pasta flavors and cuts! Our options may vary depending on the time of year!)
Do You Offer Stuffed Pastas, or Fresh (NOT DRIED)?
YES! However, these types of pasta are available for Porch Pick-Up only, located in Marlborough, MA. The reasons are simple! Stuffed pasta (such as ravioli, tortellini, etc.) cannot be dried due to the temperature controlled cheese and meat filling, and must be kept refrigerated or frozen.
The same applies to fresh pasta (not dried), which can include any of our pasta cuts, but also extends to cuts such as gnocchi, cavatelli, etc. which turn into unappetizing, hard little rocks if you dry them! These are best when kept refrigerated, or frozen.
Pasta Storage / Shelf Life
The type of pasta you choose (fresh, dried, frozen) will determine how long your pasta will be good for. The storage method you choose depends entirely on WHEN you plan on using your pasta!
Homemade fresh pasta has a shorter shelf life than commercially dried pastas:
Refrigerated Fresh: 1-2 days
Dried: 4-6 months
Frozen: up to 8 months
Refrigerated pasta (pasta that is hand rolled, cut, then placed straight into the refrigerator) should really be used SAME DAY, or at most, the very next day. If not, it can take on an unpleasant consistency, and humidity may alter it's flavor, texture, or encourage the growth of bacteria! This pasta cooks in mere minutes!
Dried pasta is STILL fresh off the rolling table!! It just simply means that after I cut the pasta, I toss it lightly with flour and allow it to air dry naturally, removing all moisture. If you're planning on using fresh pasta within a few weeks or so, this may be the best choice for you! Dried pasta does not need to be refrigerated, and can be stored on a shelf in an airtight container in a dry area that is not exposed to extreme temperatures.
If you wish to keep your pasta fresh for several months, or you're unsure when you will use it, it's nice to opt for the frozen method. With this option, after your pasta is rolled and cut, it goes RIGHT into the freezer to retain it's shape, moisture, flavor and freshness, and this is how it's delivered to you! WHEN COOKING FROZEN PASTA: take the pasta directly from the freezer, and add it frozen to a pot of salted boiling water. It is NOT recommended that you thaw uncooked pasta first, as it can severely affect the texture or outcome. This pasta cooks in mere minutes!
Dietary Needs / Restrictions
Our fresh pasta is made from all natural and organic ingredients, with NO added preservatives, artificial flavoring, colors, etc. We use only fresh, quality ingredients!
We get asked ALOT about options for different types of flours, custom bags with no egg, no salt, etc. Our recipes can easily be altered to accommodate dietary needs, and alterations or substitutions can usually be made for most, if not all, options! If you have a specific preference, this would likely be considered a custom order; just visit the Contact Us page, and let us know!
(Please advise us of any severe allergies. While your pasta order itself may not contain specific allergens like dairy or nuts, please be advised our pasta is made in a home kitchen where allergens may be present. We can and will change the preparation process of your pasta if need be!)
Do You Do Bulk Orders?
Yes! I happily provide large quantities for special occasions or family gatherings! These orders do require advanced notice of more than 2 weeks, so please utilize the ‘Contact Us’ submission, and let’s chat about the details of your event!
Why Our Pasta?
Fresh pasta yields much more than commercially boxed pastas (about 30 - 50% more). It also has a much more spongy, rustic texter which allows sauces to adhere and absorb much better!
Fresh pasta is healthy! Our pasta is made from all natural and organic ingredients, with NO added preservatives, artificial flavoring, colors, etc. We use only fresh, quality ingredients, with flour obtained straight from Italy!
More importantly, if not MOST, QUALITY. Every piece of our pasta is hand rolled and cut by hand, because we truly believe in the rituals and traditions of our culture. We use nothing pre-made or pre-mixed. Could we use bottled lemon juice, or canned tomatoes already flavored with basil and garlic? Sure, we could. But we DON’T. At Piccoline’s Table, we do things the right way, NOT the easy or quick way. Good food takes time, it takes work, and care. We grow our own basil, we roast our own garlic cloves, and we break down our own fresh vegetables for our noodles! Italian food is all about authenticity, freshness, and heart. Try us out!
