Our Goal
At Piccoline’s Table, we celebrate the tradition and the art of pasta made by hand. Our pasta is made in small batches, using traditional Italian methods that evoke old-world Italian flavor. Our goal is to help bring back those old school, traditional ‘Sunday Dinners,’ one table at a time!
Our 3 Tiers of Pasta
Traditional: Enjoy the classic, traditional taste of Italy’s favorite comfort food. This pasta is crafted using Semolina Flour, evoking a rustic, “spongy” texture, with comfort and familiarity.
Flavored: Each flavored pasta is infused with ONE ingredient or enhancement, such as a vegetable or herb.
Premier: Experience the complex flavors of our Premier pasta line. These flavored pastas are crafted using MULTIPLE ingredients or enhancements (such as egg, herbs, vegetables, wine, olive oil, etc.) OR may entail additional time or lengthy preparation steps based on complexity.
Our Guarantee
At Piccoline’s Table, our pasta is made by hand using traditional methods and simple, carefully chosen ingredients. Just as it has always been done, each batch dries naturally—responding to the day it was made, the air around it, the current weather and environment, and the character and response of the ingredients themselves.
This gentle variation is part of what gives handmade pasta its soul—and its individuality. Because it is naturally dried, and not industrially produced, each batch can vary slightly. This is a hallmark of true artisan pasta, not a flaw.
What never changes, however, is our standard.
That said, every bag of pasta we sell is meant to cook beautifully and bring joy to your table. If for any reason your pasta does not meet your expectations or does not cook as it should, we will gladly make it right.

Fresh Dried Pasta

My dried pasta is STILL fresh off the rolling table!! Fresh Dried simply means that after I hand roll and cut the pasta, I toss it lightly with flour and allow it to air dry, naturally removing the moisture. Dried pasta does not need to be refrigerated, and can be stored on a shelf in an airtight container in a dry area that is not exposed to extreme temperatures.

Cooked fresh pasta yields 30%-50% more than commercially dried pasta.
Know Your Portions!
½ Lb of fresh pasta (8 oz) makes apprx 3-4 servings (about 4 cups once cooked)
1 LB of fresh pasta (16 oz) makes apprx 6-8 servings (about 8 cups once cooked)
Additionally - most of our specialty flavored pastas are 12oz portions - 12 oz yields apprx 4-6 servings, depending on your preferred dish size!

Our fresh pasta is made from all natural ingredients, with NO added preservatives, or artificial flavoring, colors, etc.
Most of our recipes can easily be altered to accommodate dietary restrictions, and alterations or substitutions can usually be made! If you have a specific preference, just visit the Contact Us page!
(Please advise us of any severe allergies. While your pasta order itself may not contain specific allergens like dairy or nuts, please be advised our pasta is made in a home kitchen where allergens may be present. We can and will change the preparation process of your pasta if need be!)

Dried fresh pasta typically cooks much faster than commercial boxed pasta from the store! Each bag of Piccoline’s Table pasta has suggested cook times based on individual pasta styles, shapes, thickness and ingredients! HOWEVER - fresh pasta that is air dried naturally can dry differently each time it’s made! So, in general, we recommend you start with our suggested times, but always cook to YOUR liking! Just like snowflakes, no 2 pieces of fresh pasta are the same! (Fresh pasta typically takes anywhere from 5-10 minutes for thinner cuts, to 12-15 minutes for heavier, thicker cuts).
